Guy Fieri makes pork recipes on Fox News

Tastebud Poppin' Pork Piccata
Makes 4 to 6 servings
Times: 10 minutes prep, 10 minutes cook

Ingredients:
3 or 4 pork shoulder blade steaks, 1/2 to 3/4-inch thick (3 1/2 to 4 pounds total)
1/2 cup dry white wine
1/4 cup garlic, peeled, smashed and slightly chopped
5 teaspoons lemon zest, grated
5 tablespoons lemon juice
4 tablespoons capers, drained
5 teaspoons Dijon-style mustard
2 1/4 teaspoons black pepper, cracked
1 1/4 teaspoons fine sea salt
1 tablespoon Italian parsley, chopped

Cooking Directions: Combine wine, garlic, lemon peel and 3 tablespoons juice, 3 tablespoons capers, mustard, 2 teaspoons cracked pepper and 1 teaspoon salt in small bowl.

Place pork in single layer in 2 1/2 gallon resealable plastic bag or large glass baking dish. Pour wine mixture over pork. If using bag, close bag to seal. Turn bag or pork over in dish to coat with wine marinade. Marinate for 30 minutes at room temperature or in refrigerator for up to 1 hour,

Preheat gas grill to medium-high heat for direct grilling. Remove steaks from marinade, brushing off any large pieces and reserving marinade. Transfer marinade to small sauce pan. Bring to boil; reduce heat. Simmer, uncovered, for 1 minute; remove from heat.

Grill steaks, uncovered, for 6 to 10 minutes or until the internal temperature reaches 160 degrees F, turning steaks over halfway during grilling and brushing occasionally with reserved marinade. Transfer steaks to carving board. Loosely cover with foil; let rest for 5 minutes.

Remove foil. Sprinkle with remaining 1/4 teaspoon salt and 1/4 teaspoon pepper. Top with remaining 1 tablespoon lemon juice, parsley and remaining 1 tablespoon capers. Cut into serving pieces before serving.

Strawberry Pork Chop Fiesta
Makes 8 servings as an appetizer
Times: 20 minutes prep, 25 minutes cook

Ingredients:
4 boneless top loin pork chops, 1-inch thick (about 1 3/4 pounds total)
4 tablespoons bottled roasted red sweet peppers, chopped and well drained
4 tablespoons frozen artichoke hearts, chopped and thawed
8 teaspoons cream cheese
8 to 12 pickled jalapeno slices, nacho-style
2 large strawberries, thinly sliced
1 12-oz package center-cut bacon, thinly sliced (16 slices)
1 tablespoon balsamic vinegar

Honey Mustard Sauce:
1/4 cup beer
2 tablespoons honey
2 tablespoons Dijon-style mustard

Cooking Directions: For honey mustard sauce, combine beer, honey and mustard in a small sauce pan. Bring to boil; reduce heat. Simmer, uncovered, for 2 to 4 minutes or until slightly thickened and reduced by 1/3. Stir occasionally to prevent over boiling. Makes about 1/4 cup.

If necessary, trim and discard surface fat from pork chops. Place pork chops on cutting board. Cover chops with plastic wrap. Starting from the narrow end of each pork chop, pound chops to 1/4 inch thickness using the flat side of a meat mallet. Remove plastic wrap.

Near a narrow end of each flattened pork chop, layer 1 tablespoon of roasted pepper, 1 tablespoon artichoke hearts, 2 teaspoons cream cheese, 2 or 3 slices of jalapeno, and 2 or 3 slices of strawberries. Tightly roll pork to enclose filling ingredients. Set rolls aside.

Place a large piece of plastic wrap on work surface. Lay out 4 slices of bacon by placing them 1/4 inch on top of each other in a shingled fashion. Near a short edge of the shingled bacon, place 1 pork roll. Using the plastic wrap to help lift bacon, roll bacon around pork roll. Remove plastic wrap and set bacon-wrapped pork roll aside. Repeat wrapping remaining pork rolls with remaining bacon.

Preheat gas grill to medium heat for direct grilling. Cut two 14 x 16 inch pieces of heavy foil. Place 2 pork rolls, end to end with seam sides down, on center of each piece of foil. Drizzle balsamic vinegar evenly over pork rolls. To make packets, bring up 2 opposite sides of foil; fold down to close, making 2 or 3 tight folds. Fold remaining opposite ends to close. Place foil packets, folded seam up, on grill rack. Close lid and grill for 20 minutes or until internal temperature reaches 160 degrees F.

Remove foil packets from grill and remove foil from pork rolls; discard juices and foil. Return pork rolls to grill, brush with mustard sauce. Continue grilling, uncovered for 2 to 4 minutes or until bacon is crisp, turning occasionally (watch carefully, bacon drippings may cause flames).

Transfer pork rolls to carving board. Loosely cover with foil; let rest for 5 minutes. Cut into 3/4 inch thick slices; serve with remaining mustard sauce.



Moreover, the Next Pork Personality has been crowned by Guy Fieri. Kristina Vanni of North Hollywood, CA, has been named the National Pork Board's "Next Pork Personality" after a live tong-to-tong grilling showdown at the Food Network New York City Wine & Food Festival.

Vanni walked away with the $5,000 grand prize for her PORK-tastic performance demonstrating her original "Spicy Asian Pork Tenderloin with Pear Mashed Potatoes and Grilled Baby Bok Choy" recipe.

"Not only did Vanni wow the judges with a presentation that would entertain any food fan, but she also brought an 'off-da-hook' recipe that really showcased the great flavor and versatility of my favorite protein - pork," Fieri said.

Searching for the Next Pork Personality

From PRNewswire -- The National Pork Board is "Fieri-ing" things up with the launch of the "Search for the Next Pork Personality" contest.
"America's pork producers are giving pork fans everywhere a chance to showcase their star qualities on the grill and meet the go-to guy when it comes to heating up the grates - celebrity chef and grilling guru Guy Fieri."
Fieri says pork is his secret for grilling success because it can be served up in so many ways. Now, passionate pork fans like him, who enjoy "hogging" the spotlight and have great pork tips to share, are invited to submit a video on TheOtherWhiteMeat.com.

Three finalists will be selected will meet Fieri go tong-to-tong in a live grill-off in New York City. Each will prepare a pork recipe that showcases their tip for Fieri and a panel of judges. The winner will be named the "Next Pork Personality," take home $5,000, a Char-Broil(R) grill and grilling accessories. Video submission is due by August 31, 2009. Official Rules.

Pork contest reminder and Charity benefits


Just a reminder, the Next Pork Personality contest — a nationwide search for a pork lover, who not only loves grilling up tasty pork but has a “grate pork-sonality” too - is going on through August 31, 2009.

Submit a short video sharing your best tip for grilling pork at www.theotherwhitemeat.com. You can be one of three finalists to compete in a live finale grill-off in New York City. Guy Fieri will help judge.

Charity auctions and appearances

[Wow. Has it really been a week since my last post? ~D]

Moments Photography was on hand to help Home of the Innocents with their fund-raising event on Oaks day. They write, "the special guest was Guy Fieri - Food Network Chef. He was so awesome to work with and we had a ton of fun!"

Kate and Josh write from their blog, "Guy Fieri came and spoke at SSU, it was really interesting!" And continue with this story he told:
"He told a story about how he was recently at a fundraiser in Kentucky trying to raise money for a children's hospital, and he was at 9K and was trying to get to 10K but all of the items had been auctioned off, and he was even auctioning off random things he just found like a mini fridge from the hotel. And finally he yelled to the crowd "We need to get to 10K, what's it gonna take??" and a guy yelled from the back "your sunglasses!"

Well, apparently he had just received the sunglasses as a gift from the manufacturer, they were a one of a kind pair, created with his custom logo and copy of his tattoo as the design. He was in love with the glasses and had only had them about a week. But after standing on stage hyping everyone up about raising money, he knew he had no choice. So he walked to the back of the room and gave the guy his sunglasses, and brought the fundraiser up to 10K."

Winners of a charity auction enjoyed a dinner cooked by Guy Fieri and his crew, served in the Barrel Room at Villa de Vino, home of Kimberly & Allan Henderson, for a party of 10.

"Fieri was gracious and fun, signing books and posing for photographs. And he promised a spin with Lucinda in the Camaro he drives in “Diner’s, Drive-Ins and Dives” when he’s back in the North Bay — that put Lucinda over the moon.

Oh, there’s a caveat. She had to promise to spike her grown in hair like Guy’s to complete the picture, but she’s game."

On Monday, May 25 - All Access Grill Pass - Guy Fieri brings two of his biggest fans to Cabo San Lucas, Mexico, to show them the Mexican pride, culture, lifestyle and flavors he enjoys when on vacation. He'll expose his new friends to the old and the new Cabo cuisines, including the places only the local foodies know about. Plus, Aaron McCargo. (repeats on May 26 and May 29)

Guy Fieri interview at KSRO


KSRO The Drive

Guy stopped by KSRO radio in Santa Rosa for a brief 10-minute visit, full of energy, and even more full of information. Here are a few highlights *not* mentioned elsewhere in my blog:

*This interview was the Friday before Guy flew to Texas to begin shooting the 8th season of Diners, Drive-Ins and Dives. We, out here in TV land, will begin seeing the 6th season of that show in February.

*Last year he was away, working, 210 days out of the year. Guy has just signed a 4-year contract with the Food Network, working 120 days this next year.

*Guy credits his managers and team members for maintaining the restaurants in his absence; credit goes first to his wife, family, business partner Steve and CFO Amy, empowering him to do the work he needs to do. They are now looking at Las Vegas and other large metropolitan areas to open new restaurants.

*Guy is writing 500 or 600 recipes a year now. (I'm lucky if I write 5 or 6)

*Guy has four shows on the Food Network, which he felt was daunting. There is some debate between which will go forward next year, Guy's Big Bite or Guy Off the Hook. (Oh, I have a preference!! I really do! Dare I even say?)

*Diners, Drive-Ins and Dives is the #1 show on Food Network. (?!?)

*Guy is looking forward to going to Cabo Wabo soon (when?), to shoot a grilling special for the Food Network with Sammy Hagar.

*In March he'll shoot 30 shows in 10 days, at the Food Network Studios in New York.

*In May, Guy will go to Iraq in his second effort towards supporting American troops. They will fly into Baghdad and travel to 10 cities. He's ordering 5000 pounds of pork towards that effort. (unreal)

*Guy is forming the "Guy Fieri Foundation," with a goal of fostering kids imaginations and dreams with mentorship.

Guy Fieri - a day in May in L.A.

Guy Fieri made a quick trip to Los Angeles for an appearance on The Tonight Show with Jay Leno on Tuesday, 5/11.

Earlier in the day, Guy stopped by the Mark and Brian show at the KLOS 95.5 FM studios in Los Angeles, CA. He brought in burgers from Hodad’s in Ocean Beach and tested out some new games from his NBC show Minute To Win It.
