Guy Fieri knives benefit food bank, limited time

Ergo Chef and TheBaker.com are teaming up in support of the Chicago Food Depository. For every 50 Guy Fieri "Knuckle Sandwich" knives sold through Baker.com, Ergo Chef will donate one 8-knife block plus one extra knife, and TheBaker.com will donate 5% of profits from all sales to the Chicago Food Depository. I wrote to Doc Kane of TheBaker.com to find out a bit more information.

"It's part of our mission as a company to give a percentage of our profits back to the community," Kane said, "and I thought the Chicago Food Depository was a good match, and a good partner to help out. One of the neat things about the Depository is that they have a program that trains unemployed Chicagoans as Chefs, and while they're training they prepare after school meals for the youth of Chicago."

The Depository is the hub for all the Community Kitchens that help Chicagoans who need food for their families. According to Kane, it's a well-organized program that does a ton of work for the community. "Food Banks are a treasure in this country, and I believe that in this business where we're talking about the pleasures of food and great kitchenware, we need to always remember those who are not as fortunate, and we should always help in any way we can. No one should ever be hungry in this country, I'm a firm believer in that."

Click here to find out more about the Chicago's Community Kitchens.

TheBaker.com was conceptualized almost ten years ago. The site was launched on February 1, 2010. It is an online retail and community site geared toward home and professional bakers and pastry makers. Currently in the "Beta" stage, visitors can count on a new recipe every week from a different bakery in each state. "We've done four already, Connecticut and Delaware are up next and already in the can. We also have tips and tricks, baking videos, and, of course, one new item a week. Items are generally not available on every corner store, unique and worth having!"

The donated 8-knife block plus extra knife will be used by the Depository's kitchens in preparing meals for the Chicago community. "It's an incredible gesture (by Ergo Chef) that will be really useful for the kitchen program they have," Kane commented.

The promotion is set to end February 14, 2010. But if the fund-raising drive is still rolling successfully this week, Kane said, "we're thinking about extending the drive.... We also lowered the shipping to only $1."

TheBaker.com has Guy Fieri's 8-inch Chef Knife on sale for $75.99 and the 5 1/2-inch "Dragon Dagger" Utility Knife on sale for $44.95.

Celebrity Chef night at Palapa Joe's, with Guy Fieri

I mentioned in an earlier post, Guy Fieri spent some well-earned vacation time in La Manzanilla, Mexico in late January, 2010. In fact, that's where he celebrated his 42nd birthday, with friends and family.

For the third year in a row, Guy was celebrity chef at Palapa Joe’s restaurant in La Manzanilla. His January 26, 2010 fund-raising dinner featured "Asian cuisine that sated and delighted diners lucky enough to get a reservation," according to the Guadalajara Reporter.

Palapa Joe's started by getting the word out on January 12, "Guy's coming to town pretty soon...."

And on Guy's birthday, January 22, they threw "quite a birthday party for our friend Guy Fieri....lots of fun. ...Guy Fieri cooks Tuesday."

Guy Fieri’s Chef Night at Palapa Joe's has become so popular, the Guadalajara Reporter wrote, "two seatings were required to feed everyone this year. After 80 reservations, the restaurant had to turn hopefuls away days before the scheduled event. Testament to La Manzanilla’s grapevine, the dinner was not advertised; news spread by word of mouth.

Phew...Guy et al did a great job today....think the final tally was 80 mas o menos. A large contribution is on the way to the kindergarten kitchen project. - Palapa Joe's

Palapa Joe's cooked over 30 kilos of meat to make Guy Fieri's Mongolian Beef and Ginger-Marinated Chicken, served with Hong Kong Noodles and Barbecued-Pork Fried Rice. "And it’s not like one can just hop over to our local Safeway for rice-paper wraps for almost 200 spring rolls in peanut sauce. Fieri creates an event!"

All of Guy Fieri's family was in on the act. Guy's son, Hunter, and his father, Jim Ferry, worked in the kitchen and in the bar, and Guy's mother, Penny Ferry, sold raffle tickets for a copy of More Diners, Drive-Ins and Dives and an autographed Ergo Chef’s knife.

Guy Fieri worked the hot woks and "still managed to schmooze with patrons, pose for pictures and sign autographs, never losing his million-dollar smile."

Proceeds from the event benefited the local kindergarden, receiving a substantial donation toward building a kitchen, so all the children are guaranteed at least one nutritious meal each day.

We broke Guy's son Hunter in as a barman - Palapa Joe's

The Fieri family has been visiting La Manzanilla each winter for years and is planning to construct a home there. Jim and Penny Ferry donate a major portion of their time working with an orphanage in Colima.

Guy's Big Bite - En Fuego Fieri - Aired 2/7/10

Guy Fieri fires up the romance with a spicy meal inspired by his Mexican vacations. Tender halibut in a pumpkin seed crust heats things up with a Cilantro Serrano Cream sauce. On the side, Guy's mashed potatoes are creamy, cheesy, and studded with roasted peppers. Dessert keeps the flames alive with chile-dusted Chocolate Quesadillas.

Guy Fieri's ultimate Super Bowl bash

Guy Fieri was on CBS "The Early Show Saturday Edition's" Chef on a Shoestring for the broadcast's pre-Super Bowl special, live from Miami Beach, Florida, February 6, 2010. Guy had their usual $40 "shoestring" budget and had free reign to create his ultimate "big game" menu.

Baltimore Pit Beef Sandwich
INGREDIENTS:
For the rub:
2 tablespoons seasoned salt
1 tablespoon sweet paprika
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon black pepper

For the sandwich:
1 3-pound piece top round
8 Kaiser rolls or 16 slices of rye bread
Horseradish sauce (see recipe)
1 sweet white onion, sliced thin
2 ripe tomatoes, sliced thin (optional)
Iceberg lettuce (optional)

METHOD:
Combine ingredients for the rub in a bowl, and mix. Sprinkle 3 to 4 tablespoons all over the beef, patting it in. Place in a baking dish, and cover with plastic wrap. You can cover the beef with the rub for a few hours, but for maximum flavor, leave it for 3 days in the refrigerator, turning once a day.

Prepare a hot grill. Grill beef 30 to 40 minutes, or until outside is crusty and dark brown and internal temperature is about 120ยบ (for rare). Turn beef often. Transfer to a cutting board; let it rest 5 minutes.

Slice beef thinly across grain. Pile beef high on a roll or bread slathered with horseradish sauce. Garnish with onions, tomatoes and sliced lettuce. Serve.

Horseradish Sauce
INGREDIENTS:
1 cup mayonnaise
1/2 cup prepared white horseradish, or to taste
2 teaspoons fresh lemon juice
Salt and black pepper to taste

METHOD:
Combine ingredients in a bowl, and whisk to mix. Adjust seasonings to taste.

It's off to Super Bowl for Guy Fieri

It's Super Bowl all weekend for Guy Fieri.

Super Bowl warm-ups started with a Guy Fieri interview on Southern Sports Now, WSPO Sports, Charleston's Sports Leader, on Wednesday, February 3, 2010.

Guy gave advice on Super Bowl foods with tips on pasta, Super Bowl party no-no's, suggestions for chicken wings and a secret recipe for jambalaya - peppers and onions, chopped p0rk, chicken thighs, sausage, seasonings, then add rice and water and let it cook down.

And for the seafood lover, Guy Fieri suggests shrimp or some flour-cornmeal-Panko-dredged, beer and mustard-battered fried fish fillets.

Guy Fieri's prediction for the Super Bowl XLIV? All due respect to the Saints, Guy's calling the "Colts, 33-23, all about the 2nd half, a lot of air, gonna be a monster game."

Guy Fieri flew out from SFO to south Florida on Thursday the 4th.

Unrelated to Super Bowl (but I'm sure the topic will come up), on Friday the 5th, Guy Fieri is scheduled to do an interview with KISS107 (website), based in Cincinnati, OH. Air time 8:01 a.m., local time.

On Saturday, February 6, 2010, Guy WAS scheduled to play flag football at DirecTV's Celebrity Beach Bowl Game, but now he isn't listed as one of the players (here). According to theDTV, Guy Fieri is out. Bummer!

However, on Saturday night, Guy Fieri is a-twitter about co-hosting an NFL party on Saturday night with Michael Strahan. It is hard to keep track of this man! Haha.

Then on Sunday the 7th, Guy will be cooking some signature recipes, “perfect tailgate food," for the Super Bowl Today pre-game broadcast crew on CBS, all courtesy of Ritz Crackers (website).

Click here for recipe - Buffalo Chicken Meatballs, and click here for recipe - Shrimp Jalapeno 'Poppers' from Guy Fieri at the Super Bowl.

Sad times for Norman, Oklahoma Diner

Mark Amspacher, owner since 1996 of The Diner in Norman Oklahoma, died Monday, February 1, 2010 in Norman Regional Hospital. He was 56.

Amspacher is best known for his award-winning chili, which won the state's chili championship cookoff twice. Here's the recipe for his Southside Chili, submitted to the Food Network.

Southside Chili - click here for recipe by Mark Amspacher, owner of The Diner in Norman, OK

Focusing on old-school staples like omelets, pancakes and burgers, Amspacher's diner won national attention when it was featured on the Food Network's "Diners, Drive-in and Dives" in November 2009, Diners Times Three.

"His scrambled eggs are probably the best ever. He did something different to them. Put water or something in them. He had the magic touch," said friend and customer Ben Benedum, thoughts lingering on the eggs' custard, buttery lightness accompanied with bacon.

Long-time friend Doug Burns said many of the specials featured at The Diner, scotch onions baked in butter and garlic and a number of wild quail dishes, were birthed while cooking around the campfire of his ranch.

The family asks that memorials be sent in Amspacher's memory to Norman's Food and Shelter for Friends, 104 W. Comanche St.

Condolences can be sent online at www.havenbrookfuneralhome.com.

Sarah Amspacher, 27, Mark Amspacher's second oldest daughter, said The Diner, which is temporarily closed, will reopen soon.

The Squeeze Inn moves, but not far

The Squeeze Inn, one of the first and most popular restaurants featured on Diners, Drive-ins and Dives, found itself facing a Federal lawsuit last summer over questions surrounding their ability to meet ADA guidelines.

Although the lawsuit was dropped, The Squeeze Inn location in Sacramento is moving to a nearby, and larger, building.

Their last day in the old location will be Saturday, February 6, 2010. As recently as this past November, Guy Fieri gave the Squeeze Inn a shout-out on The Jay Leno Show for making one of his favorite burgers.

Jay: Who serves the best hamburger in America?

Guy: Not going to get anybody mad here, I hope. I think it's got to be one of two places. Hodad's in San Diego, or the Squeeze Inn in Sacramento. But it's a Cali-based thing.

The Squeeze Inn was featured in the Burgers episode of Diners, Drive-ins and Dives, Season 1.

MegsMakeUp was there for a burger, recently. She wrote,
"For those of you who live in a cave in Sac town (and those of you who just plain don't live here) we have a small but infamous burger joint known as the "Squeeze Inn". For over 30 years now residents near and far have been making the trek to this tiny little haven of burger perfection to "squeeze in" to one of their 12... you heard me... 12 stools that line the counter of this itty-bitty-booty-committee eatery. Big or little booty... that's all the real estate you get to belly up to the best burger around."
And continued,
"There is was before me... a 1/3 pound all beef patty covered in just about as much cheese melted and fried to a crispy cheese ring (or cheese skirt as they call it) all around my burger! I had to break off sheets of the cheese, fold them in half and eat like a quesadilla with no tortilla just to get to my burger. Then the BURGER! Oh good LORD the burger. It couldn't get any better than this."
She finishes her post with an inspiring story of a few young people at the restaurant giving up their coveted seats to members of the military. It's a nice read. Click here to check it out.

The Squeeze Inn will keep everyone up-to-date on the move via twitter.com/thesqueezeinn and on their website.
