The best bacon Guy Fieri ever ate - a Hodad's burger

Anticipating that people will be just as excited about this week's episode of "The Best Thing I Ever Ate" on the Food Network as they were about the "Totally Fried" episode, I thought I'd beat the rush and get some information out about "With Bacon."

Hodad's Bacon Cheeseburger

Yield: Makes 4 burgers

1¼ pounds lean bacon ends or thick-cut bacon (available at specialty butchers)
8 slices American cheese
11/3 pounds fresh ground beef chuck
Kosher salt and freshly ground black pepper
4 (5-inch) hamburger buns
2 tablespoons mayonnaise
2 tablespoons yellow mustard
8 onion slices, about ¼ inch thick
Ketchup
8 dill pickle slices
8 tomato slices, about ¼ inch thick
1 cup shredded lettuce

To make Hodad's bacon: roughly chop the bacon. Put in a saucepan with water to cover. Bring to a boil, reduce to a simmer, cover, and cook until the bacon shreds easily, about 45 minutes. Drain. Chop the bacon fine and portion into 4 patties.

Put the bacon patties on a hot griddle (or in a hot skillet) and cover with a griddle weight (or press repeatedly with a spatula). Cook until crisp. Flip over and cook until the second side is crisp as well. Remove the weight and place 2 slices of American cheese on each bacon patty.

To make the burgers: Season the beef with salt and pepper and form into 4 patties. Heat a griddle or a large skillet. Cook the burgers to the desired degree of doneness.

Toast the buns, opened and cut side down, on the griddle. Slather 2 teaspoons mayonnaise on each of the bottom buns. Then smear 2 teaspoons mustard on top. Grab 2 onion slices and build an onion tower on each bun. Top the onions with a squirt of ketchup (this takes their harshness away). Place 2 pickle slices on the top of the tower. Next, put 2 tomato slices, then top the bottom bun off with a handful of shredded lettuce.

Place the cheese-topped bacon patties on the burgers and cover each with a bun. Set the whole thing on top of the prepped bottom buns. Wrap those suckers in a piece of paper and get to eating!

Jimmy's Favorite Garlic Bread - recipe
-
a sourdough loaf baked with Italian-seasoned garlic butter and topped with a tomato basil salsa, roasted garlic, sun-dried tomatoes and Parmesan cheese.

This recipe first aired on the second episode in the first season of Guy's Big Bite, called Kickin' Cajun Alfredo. Other recipes from that episode are Cajun Chicken Alfredo and Caesar Salad.

New! Asian Street Sandwiches - recipe
- sliced grilled pork roast topped with Asian mint-marinated cucumbers, lettuce, cilantro and mayonnaise blended with oyster and chili garlic sauces.

The pork is marinated with the same flavors found in the rest of the sandwich plus garlic and ginger. Guy first tried a similar sandwich on the road and developed his own version of it.

Gaucho Steak with 4-Herb Chimichurri - recipe
- a grilled skirt steak, marinated in tequila, lemon and lime juice, garlic and cilantro, topped with a chimichurri sauce of vinegar and oil, onion, peppers, chiles, herbs and spices.

You just don't get more classic Fieri than those flavors. This recipe was part of Guy's Big Bite's fourth season, an episode called South of the Border. Other recipes included Spinach and Chick Pea Sauté (recipe) and the Tequila Lime Tart pictured above.

Chili Rice - recipe
- a spiced rice dish flavored with onions, peppers, garlic and chilis, bolstered with tomatoes, ground beef or turkey and kidney beans.

Perhaps my all-time favorite episode of Guy's Big Bite, this recipe is from Shotgun Bird in the third season. The show also featured Big Bud's Beer Can Chicken, Guid-Olives and a favorite drink from the college days, Shoot the Root.

New! Bayou BBQ Chop Salad - recipe
- Barbecue saucy chicken on a salad of lettuce, cucumber, tomato and mushrooms with a balsamic vinaigrette dressing and topped with fried onions, cheese and pepperoncini.

The chicken is grilled or broiled, then chopped into pieces and combined with bbq sauce. The recipe describes how to make your own fried onions, similar to the ones Guy used to re-invent the classic green bean casserole, The Mean Green, from Dear Food Network, Thanksgiving Disasters.

Tequila Lime Tart - recipe
- a classic lime pie filling (just add tequila!) on a vanilla wafer and pine nut crust.

Also from the South of the Border episode, this is an easy and tasty pie. I've replaced the pine nuts with macadamia nuts and added lime zest to the filling. Any way, it's a winner.

On Saturday, June 20, 2009, Guy wrote from Twitter, "At infineon raceway in sonoma, great day, killer weather, rollin with lori and hunter. Gonna see kenny stablers car run today, so kewl!"


And Monday the 22nd wrote, "Had a great time on fathers day at nascar race with hunter, ryder, and my dad. In houston shootin triple d till thurs."

The Houston Chronical reports that Food Network’s Guy Fieri of Diners, Drive-ins and Dives fame was seen late-night dining at Carrabba’s Italian Grill in Houston, Texas, with Dan Pastorini and friends on Tuesday, June 23, 2009. This report a day after Guy Fieri said as much from Twitter.
The friendly food guy signed autographs on napkins and butter plates for admirers who included Theresa Quartaro and Mary Donna Moceri, events coordinator for Grotto 610. Fieri said he was in town shooting a piece on local hot spots. Proprietor Johnny Carrabba (Moceri’s cousin) just missed the TV star, having headed home a bit earlier.
Pastorini, quarterback for the Houston Oilers 1971 - 1979, the Oakland Raiders 1980, the L.A. Rams 1981 and the Philadelphia Eagles 1983, currently lives and works in Houston as President of DP7 racing www.dp7racing.com.

At the time of this writing, I've heard no news on which places Guy visited in Houston, Texas for Diners, Drive-Ins and Dives this week. Sorry!

Guy Fieri guest hosts Next Food Network Star 5, episode 4

Guy Fieri makes his appearance on Episode 4 of The Next Food Network Star, Season 5. The episode is called "The Ultimate American Meal."

Bobby Flay tests the remaining seven finalists by having them put their culinary point of view on a classic American dish – the burger! The finalists must whip up their ideal burger while sharing personal stories and their connections to their dish. The best burger lands a place on the menu of Bobby's new restaurant venture Bobby's Burger Palace (www.bobbysburgerpalace.com).


Then, Guy Fieri and USA WEEKEND Magazine associate editor, TJ Walter, surprise the finalists on the Intrepid Sea, Air & Space Museum (www.intrepidmuseum.org), challenging each of them to create a dish using a basket of ingredients that represent a specific state or region of the United States for a group of returning American soldiers.


The winner learns that his or her recipe will be featured on the July 3-5th cover of USA WEEKEND Magazine (www.usaweekend.com), and another finalist is eliminated.

At Infineon, in Texas and upcoming DDD taping in Ohio


Last year, Guy Fieri was named Grand Marshall and did a cooking demonstration at the event pictured at left.

Monica from the Sprint Crew blogs of Nascar Blogs was at the Infineon Raceway this past Father's day weekend, and had a brief visit with Guy Fieri at the raceway.
I ran into the famous Chef Guy Fieri, who wanted to experience this race weekend as a true race fan and not celebrity. He camped out with a group of close buddies, cooking for other campers around him and even hand delivered food to the police officers on duty at the race. Fieri said jokingly, “I needed to make friends with as many law enforcement personal I as I could in the state of California!.” Ha-ha!
Yeah, Guy. You might want to work on that. LOL ~D

Guy is in Houston, TX this week, taping for Diners, Drive-Ins and Dives. He is scheduled to hit Ohio in late July for the show.

The word on the street is that Guy Fieri, host of Diners, Drive-Ins and Dives on the Food TV Network will be filming at Melt, to showcase all the great grilled cheese options you can get there. Melt will be shut down for 2 days for filming, because the kitchen is way too small for the film crew, Guy and owner chef to be in kitchen at the same time and even fathom to carry on a normal day's business. What that means for you, if you are up there, they will need people to sit in as diners and patrons of Melt. Who knows, this may be your day for fame on TV!

Guy Fieri on Benny's mofongo

The Internet lit up today with searches for "Guy Fieri mofongo" and "Benny's mofongo," so I thought I'd better get some detailed information out there. If you're looking for a Cuban restaurant that Guy went to in L.A. on Diners, Drive-ins and Dives, you might be looking for Family Style (DV0711).


The Food Network aired a special program last night, Sunday June 21, 2009, called "The Best Thing I Ever Ate" (show index page or show episode guide). Check the Totally Fried episode page for future airings.

According to Wiki, "Mofongo is a popular meatball dish made with fried plantains or yuca. The dish is part of various Caribbean cuisines including Cuban cuisine (where it is known as fufu), Dominican cuisine and Puerto Rican Cuisine."

Benny’s Mofongo

6 large plantains
6 small garlic cloves
3/4 cup pork rinds
1/2 tablespoon kosher salt, or to taste
1/2 cup pure olive oil, plus more for frying

Peel the plantains and cut into 1-inch slices. Put the plantains in a bowl of water with a pinch of salt to keep them moist until ready to cook.

Mash the garlic, pork rinds, 1/4 tablespoon of the salt, and 1/4 cup of the olive oil in a mortar with a pestle. Transfer the garlic mixture to a bowl.

Heat about 5 inches of oil in a deep, heavy-bottomed pot (or in a deep-fryer) until a deep-fry thermometer inserted in the oil registers 300 degrees. Line a plate with paper towels.

Drain and pat dry the plantains. Fry without crowding, in batches, if necessary, until the plantains are cooked, but not hard, 15 to 20 minutes. It’s best to check the plantains after about 15 minutes; to do so, remove a slice from the oil and cut into it - if the center is still pink, keep cooking; if it’s yellow, the plantains are ready. Transfer the plantains from the oil with a slotted spoon, and drain briefly on the paper towels.

Mash the fried plantains with the remaining 1/4 tablespoon salt and 1/4 cup olive oil until just soft. Add the garlic mixture and continue mashing until the mofongo is completely blended. Serve hot.

Makes 6 to 8 servings.

"It was an unusually hot day and the lines were long, so people were getting hungry and restless. But when Guy Fieri took the stage, he emitted so much positive energy that he put the crowd into a good mood. He did a lot of physical comedy interacting with the audience, pretending to squirt people with the olive oil and teasing kids.

Many people mentioned that his presentation was the "feel-good" moment in an otherwise difficult day."

Guy Fieri - recipe for May 2009

I'm not very good about keeping up with each monthly recipe that Guy sends out from his website. If you're interested, here's the link - guyfieri.com/recipes.

But this one is easy and flies off the plate. The yield is 24 appetizers. That's enough for three people. Maybe four. Just sayin' ....

CILANTRO WRAPPED PRAWNS with SPICY PICKLED PINEAPPLE

Spicy Pickled Pineapple

2 Tbsp Jalapeno, red, diced
2 Tbsp White onion, diced
6 Tbsp Rice wine vinegar
1 C Pineapple, chopped, without juice
2 Tbsp Honey
1 tsp Olive oil
1 Tbsp Lemon juice
Salt and pepper to taste

In a medium sauté pan, heat oil, add pepper and onions, lightly sauté. Combine all ingredients, heat for 3 minutes on medium heat and let cool for at least 1 hour.
I kept the jalapeno seeds in - that's what gives the spice. We found the flavor spicy but nothing that would melt your face off. For less heat, remove seeds and ribs. I've also substituted red onions for white, canola oil for olive oil and lime juice for lemon with admirable results. Play with your food, right? ~D
Cilantro Wrapped Prawns

24 Wonton skins
3 Tbsp Cilantro, minced
1/4 C Red bell pepper, juliened
1 Egg
1/2 C Milk
12 Shrimp, raw, cut lengthwise in half to create 24 peices
Salt and pepper to taste
Canola oil (for frying)

Season shrimp with salt and pepper. Mix milk and egg, dredge wonton skin in milk, then add 1/2 piece shrimp to corner of wonton skin, add a pinch of cilantro, and one piece of red bell pepper, roll up, and place seam side down in medium pan over medium to high heat filled midway with canola oil. Fry until light brown.
The version from Food Newtork specifies (21-25 count) shrimp. ~D
Yield: 24 appetizer pieces
Prep time: 20 minutes
Cook time: 20 minutes (in batches)
Inactive prep time: 1 hour
Ease of Preparation: Moderate

Guy Fieri talks about UNLV and Triple D

In a recent interview with Menu Vegas, Guy Fieri expained why he chose to get his degree at UNLV. Guy Fieri graduated with a bachelor's degree in Hospitality Management in 1990.

I wanted to own restaurants. Being a chef was not enough for me. I didn’t want to just do that. I wanted to have a business and be in charge of my entire space shuttle. I knew I had to have a real strong business foundation, and UNLV is the premier place for that. When you have that many hotels surrounding you, supporting you, just harvesting students, there's no question where to go. I had some fantastic mentors, I was a proud ATO frat member, I had all that stuff going for me. When I graduated, I was going to take two yeas and go to culinary school, but my dad said to get out there and "see if you need it." In hindsight, sometimes there are a lot of things I wish I had gone to school and learned. I didn’t get classically trained, which is a good and bad thing. But in the end, bro, there is nothing I would really change. I am completely satisfied with who I am.



And Guy's thoughts on why Diners, Drive-Ins and Dives is such a popular show?

I don’t know, bro, but it is the number one show and I don’t take credit for it. I look at it as I’m the quarterback of the team and you can’t throw a touchdown pass to yourself. It takes about 50 great people to make that show happen. Why do people dig it? I think people just get the impression or feel a connection with me, that I'm just some dude who lives across the street from them, he's a little crazy, and he takes them on this tour. I'm just like you. I’m a food junkie. I’m having as much fun as anybody on this show. I mean, really, I get to eat all this stuff, then we're gonna talk about it, and I'm going to drive a Camaro. Tell me what part of that sucks. I think people watch it and think, "I wanna go, too!"

Guy Fieri at the Shoreline Amphitheater

Guy Fieri was in three public events at the Great American Food & Music Fest. He did a cooking demonstration of Hong Kong Noodles (recipe)from 3:00 - 3:45, a brief book signing from 4:00 - 4:45 and had a feature presentation on the main amphitheater stage from 7:45 - 8:30, making gallons of margaritas and his Pork En Fuego (the Tonight Show). Sometime between 5:00 and 7:30, Guy joined Bobby Flay and several of the music acts for a private meet & greet with VIP ticket holders.

At the mid-afternoon demo on the Serious Eats stage - a stage set up in front of a grassy area, The Examiner
wrote,
"He was having the time of his life cooking, joking and all-around kvetching with the appreciative crowd. One woman in the back of the crowd was handed a microphone and asked Guy if he remembered her? 'Well, ma'am,' he quipped, 'I can't see that far, but your voice sounds HOT!'. A fun, lighthearted moment for the hungry, stressed throng, one that enabled me to leave the event with a smile."

The book signing was fast and furious. Rdshft said,
"... the most dissapointing thing that happened was with my 3 year old daughter who is a big Guy Fieri fan. She had gotten a wrist band that she wears like guy on her right arm and all week had talked about going to see Guy. We waited in over an hour long line for his book signing, having already bought 2 of his books. We finally get to the front Guy barely looks up at her just signs her name. My wife asked him if we could take a picture with her. Guy response was "OK but i have to keep signing" which is understandable. We go to walk around for the picture since Guy said it was Ok, but one of his people standing on the side says sorry no pictures and doesnt let my daughter get her picture. So now I have an upset 3 year old who doesnt understand why she cant get a picture with her favorite Food Tv star even though he said it was ok. That was it for us we left."
Then came the big demonstration - what Guy described as a preview of what's to come in his upcoming "Knuckle Sandwich Tour," which Bay Area Bites described as,
"A Rockstar Performance ... Must give props to Guy, he rocked the crowd with a highly entertaining blowout performance complete with loud rock n'roll, gratuitous hot chicks on stage, big machinery, power tools, and pyrotechnics."


And Pages, Pucks & Pantry said, "He was like a rock star, the crowd was going wild, he was blaring Mas Tequila while he had the slushomatic going. He was putting on a great show and I think the crowd needed his enthusiasm at that point. Not sure about his cooking as we were a bit too tired and hungry to stay to watch."

One VIP ticket holder wrote to me saying, "I was disappointed when Guy had everyone in the 'cheap seats' move down towards the front [during the evening demonstration ~D]. I'd paid a lot of money to be in the front rows and felt even more ripped off than I had before. The shows were great, but all the other hassles combined made it for a bad experience."

There were reports that Lori, Guy's wife, joined him at the Food & Music Fest in Mt. View, although I've found no pictures.

Knuckle Sandwich Tour cities and dates TBA

Tour dates and cities have been announced - see blog post. Guy Fieri tour dates for 2010 have not yet been announced. Keep an eye on Fans of Guy Fieri homepage, or check GuyFieri.com.

As Guy Fieri sent from Twitter, he and his "krew" will tour 22 cities on the Knuckle Sandwich Tour. (I still don't like that name, "Knuckle Sandwich," but done is done, I suppose. Oh, and not to be confused with "Knuckle Sandwich" by Ellay Khule & the Rifleman. ~D)

Guy said recently in an interview, "It's been a trip ... I don't think I ever imagined this. I always wanted to be a rock star, to be a drag car driver, wanted to do something!

But I've always been so down-home secure, so satisifed with being a chef and having restaurants — so to ever think that the two would have collided, such a thing as a rock and roll chef, I never would have imagined it, but boy am I enjoying it."

The tour is scheduled in November and December, starting in Rhode Island and ending in Las Vegas.

The show will be a mix of rock music and food.

Reviews of the Great American Food & Music Fest

Or as one blogger called it, the Great American Food and Music Fiasco.

Blogs and newspaper articles are rifling today over the debacle that was yesterday's Great American Food & Music Fest. There were so many, I didn't even jot down the url's for all of them.

"Where was the music," one blogger questioned. "We left after one hour, and warned everyone waiting in line to not go in," wrote another.

From a Serious Eats blog, here are a few more comments:
"As we were walking from our car to the venue in mid-afternoon, patrons walking back to their cars were warning us not go. They said that lines for food were hours long and some food was running low or gone altogether. I should have listened and turned around because not only were the lines ridiculously long and some food running low, there were way more people than I had ever anticipated. It was pretty much shoulder to shoulder. No wonder there was a problem getting food to everyone. I did see Guy Fieri's first demo (which was well done) squinting through at least a hundred heads."
"bobby flay and guy fieri should have fire their agents for talking them into such a poorly planned event."
"Did anyone even see Bobby Flay or Guy Fieri? Did they even show up?!"
And a reply from one of the event coordinators (A Mr. Jim Lewi, producer, of the Agency Group if I'm not mistaken)

Thank you so much for taking the time to write. I am so incredibly sorry about what you went through.

We certainly had every intention of making everything perfect. The fact is, the problems were not anyone's fault by ours. Not the building's, not Live Nation. We wanted to keep lines down so we invested all this money (upfront...not too smart) for the "cashless system" that would do just that... according to the company that was running it. This company had a resume that included NASCAR races (200,000 +) so when we heard that every transaction could be made in 3-seconds or less, we were in. We had them come in a week early and start testing...making sure everything worked...then as we opened the doors, the system failed.

The Fest did have an emergency system in place and cash banks and credit card machines were distributed prior to the show, but it took us nearly 45-minutes to switch over and by that point, we had very large lines. Added to that, it was our first year and we had no way to really judge attendance. We looked at "pre-sales" and doubled them thinking that was safe...and we would be over. We were wrong...and very sorry.

It is important to us as producers for you to understand that we do care and put years of hard work into this just to have one company take us down.

If you would like a refund, it isn't the easiest process, but it does work.
